Lemon Tofu Peas Salad

Ingredients

  • spinach
  • extra Firm tofu
  • olive oil
  • your favorite hot sauce (ie. Siracha, Valentino)
  • 1/2 – 1 cup peas
  • non-fat cream cheese
  • lemon pepper
  • salt

Recipe

Boil peas according to instructions (I buy frozen peas, so I usually boil them for 5 minutes until tender). Drain water and set peas aside. Cut tofu in a long, rectangular shape. Place tofu on a pan with olive oil and heat until golden brown on both sides. Set tofu aside. Empty cream cheese contents into a large bowl, and add peas, lemon pepper and salt to taste, and mix thoroughly. On a plate, spread a small layer of the cream cheese mixture. Next layer on Spinach and 2 slabs of tofu. Add a few drops of hot sauce and garnish with some extra lemon pepper and olive oil. Store leftover tofu and cream cheese mixture in the fridge (eat within 10 days). Enjoy!

Inception Cookies

Ingredients

  • cookie dough **If you’re feeling up to it, start by making fresh cookie dough from this recipe. If you’re feeling lazy…use pre-made cookie dough (ie. Betty Crocker chocolate chip dough mix, etc.)
  • 1 pack of Oreos

Recipe

Preheat the oven to 350 degrees F. With your hands, scoop out some dough and slightly flatten it. This will be the base. Place an Oreo on top of it. Then, take more cookie dough and place it on top. This will be the roof. Next, press the sides of base and roof together all the way around the Oreo. The Oreo should now be housed inside…a cookie within a cookie (INCEPTION!) Line the cookies on a greased or parchment paper covered baking sheet. Bake for 15 minutes or until golden brown. Cool for 8-10 minutes (on a wire rack if available). Enjoy! **If this is for a party and you want the cookies to be aesthetically pleasing, cut them in half and arrange them so the ‘inception’ idea shows.

Pizza (dough from scratch)

Ingredients

  • 1 packet fast acting dry yeast
  • 1 cup warm water (105 to 115 degrees F)
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 2 1/2 cups flour
  • Italian herbs
  • sauce
  • mixed Italian cheeses
  • pizza toppings of choice

Recipe

Preheat oven to 450 degrees F. Dissolve the yeast and sugar  in the warm water in a small cup or bowl.  Add the the rest of the ingredients into large mixing bowl, and mix in the yeast water. Mix and knead the dough in the mixing bowl. It helps if you put some oil on your hands while kneading to avoid all the stickiness. Make the dough into ball while you have some oil on your hands and cover with paper towel for 20- 25 min. Use this time to chop veggies and take out sauce and cheese. Then knead the dough again for a few minutes and dump onto greased pizza pan (cookie sheet). Work and stretch the dough until it covers the sheet. Add some sauce and cheese. Then put toppings on top and Italian seasoning. Bake for 12-15 (set timer for 14 min).

Oreo Truffles

Ingredients

  • 1 package of Oreo cookies
  • 1 8oz package of no fat or low fat cream cheese
  • 2 8oz packages of semi-sweet baking chocolate (ie. Bakers, etc.), melted

Recipe

Take 10 cookies and place them inside of a resealable Ziploc bag and use a rolling pin to crush them into fine crumbs. Reserve these crumbs for the topping. Crush the remaining cookies in a similar manner, using the same bag. Put these crumbs in a medium size bowl. Add the cream cheese and mix until well blended. Using a cookie dough scooper, scoop out 1-inch diameter balls, drop it into a spoon, dip the balls into the melted chocolate, and place on wax paper-covered cookie sheet. Sprinkle the tops with the reserved cookie crumbs. Refrigerate for 1 hour, and serve chilled. Store leftovers in fridge or freezer. **If you don’t have a cookie dough scooper, use your hands to roll balls mixture into balls.

Kale Chips

Ingredients

  • 1 bunch of kale
  • 1-2 tbsp of olive oil
  • 1 tsp salt
  • 1 tsp of desired seasoning (ie. ginger, garlic, Italian, nutritional yeast) (optional)

Recipe

Preheat oven to 350 degrees F. Cover a cookie sheet with parchment paper or lightly grease it. Wash kale thoroughly, keep an eye out for critters! Dry kale leaves in between 2 paper towels to get water off or with a salad spinner if you have one. With a knife or with fingers, remove the leaves from the thick stems and tear them into small bite-size pieces. Put dried kale leaves on the greased/covered cookie sheet and drizzle them with olive oil. Toss them around with your fingers to make sure they’re covered (be careful not to add too much olive oil). Season with salt. Bake until the edges are brown but not burnt, usually between 10-15 minutes. Check at 10 minutes. After removing them from the oven, add any optional additional seasoning. Serve at room temperature.

Chocolate Chip Cookies 2.0 / Cookie Bars

Ingredients

  • 2 1/4 cups AP flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 sticks of butter
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 eggs (or substitute)
  • 2 cups of chocolate chips (about 1 pack)
  • 1 cup chopped walnuts or pecans (optional)
  • dash of nutmeg

Recipe for regular cookies

Preheat the oven to 375 degrees F. Combine dry ingredients in one bowl and wet ingredients in a separate bowl. Gradually add contents of dry bowl to other bowl. Stir in chocolate and nuts. Drop scoops of cookie dough (about 2 inches) onto greased sheet/one with parchment paper. Bake for 9-11 minutes, cool for 5 minutes, and enjoy!

Recipe for cookie bars

Grease 15 x 10-inch baking dish. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes. Cool for 5-10 minutes, slice into bars, and enjoy!

Chocolate Chip Cookies

Ingredients

  • 2 sticks of salted butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs (or substitute)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups AP flour
  • 3 cups of quick oats
  • 1 tsp vanilla extract
  • 1 pack of chocolate chips
  • 1/2 cup of chopped pecans or walnuts (optional)
  • 1 small mashed banana (optional)

Recipe

Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper or grease the cookie sheet. Wash your hands thoroughly. Mix sugar, butter, (banana) and eggs in one bowl with hands. Mix dry ingredients in a separate bowl. Add dry ingredients gradually to the other bowl. Mix with hands. Bake for at least 10 minutes, longer for crispier cookies.

Minestrone Soup

Ingredients

  • one bag of frozen mixed veggies (carrots, beans, potatoes, celery)
  • half a box of pasta
  • one can of italian style tomatoes
  • one can of cannellini beans (white beans)
  • one can of black beans
  • olive oil
  • salt, pepper, and italian herbs

Recipe

Saute the veggies in a large pot with some olive oil. Add a little salt and pepper. After they are cooked, add the tomatoes and beans. Include all of the liquid in the cans because it will become part of the broth. Add the pasta into the pot, and it will cook in the liquid. After 10 minutes, add herbs. Simmer until pasta is cooked. If the soup is too thick, add water. After it is done cooking, add salt and pepper to taste, and drizzle additional olive oil in the soup and mix it in for flavor.

Baked Pasta

Ingredients

  • baking dish
  • 1 can spaghetti sauce
  • 1 bag of mozzarella cheese (i use part skim)
  • 1 container ricotta cheese (i use part skim)
  • 1 box pasta (any kind)
  • some sauteed veggies

Recipe

Pre-heat oven to 350 degrees F. While pasta is cooking, saute some veggies and set them aside.  Then drain pasta.  To the pot with the drained pasta, add the cooked veggies, 1/2 the bag of cheese, and the container of ricotta cheese.  Mix together. Pour a layer of spaghetti sauce in the baking dish and spread so it covers bottom of dish. Pour in the cheese/veggie/pasta mixture. Pour remaining sauce on top.  Then spread remaining cheese on top. Bake for 20-30 min depending on oven (cheese should bubble and may turn brown in some spots). ** If just doing cheese and no veggies, add more ricotta and cheese to make more filling.

Beer Sautéed Mushrooms

Ingredients

  • 8 oz. of Baby Bella mushrooms
  • 2 Tbsp of butter
  • 1/2 Cup of any beer
  • salt and pepper to taste
  • garlic (optional)

Recipe

Melt butter of medium heat, add the mushrooms, pour over beer, and add salt and pepper. Simmer uncovered for approximately 30 minutes. If you use garlic, mince about a clove of garlic and drop it in before simmering.
