Minestrone Soup

Ingredients

  • one bag of frozen mixed veggies (carrots, beans, potatoes, celery)
  • half a box of pasta
  • one can of italian style tomatoes
  • one can of cannellini beans (white beans)
  • one can of black beans
  • olive oil
  • salt, pepper, and italian herbs

Recipe

Saute the veggies in a large pot with some olive oil. Add a little salt and pepper. After they are cooked, add the tomatoes and beans. Include all of the liquid in the cans because it will become part of the broth. Add the pasta into the pot, and it will cook in the liquid. After 10 minutes, add herbs. Simmer until pasta is cooked. If the soup is too thick, add water. After it is done cooking, add salt and pepper to taste, and drizzle additional olive oil in the soup and mix it in for flavor.
